A few quick ingredients and you have a perfect snack.
(Jenny Starrs/The Washington Post) 1.5 cups of flour 1/4 cup of potato starch 1/2 cup of water 2 eggs 2 teaspoons salt 1/8 teaspoon ground cumin 3 tablespoons unsalted butter (for baking) 1/3 cup vegetable oil, melted and cooled 1/10 cup chopped fresh cilantro (optional) 2 tablespoons chopped fresh parsley (optional, but recommended) A few small sprigs of fresh rosemary (optional for garnish) Preheat oven to 425 degrees F. In a medium bowl, combine the flour, potato starch, water, eggs, salt, cumin, and butter.
Stir to combine.
Divide the batter into 4 equal parts, and roll each piece into a cylinder.
Place one cylinder in the center of each cookie.
Bake for 25 minutes.
Cool on a wire rack.
Meanwhile, heat a large skillet over medium heat.
When the chips have cooled, place each one on a plate.
Drizzle with a tablespoon of the melted butter, then place the remaining butter on top.
Continue to cook until the butter melts and the chips break apart into little crumbs. Serve hot.
